 20th Anniversary Cookbook:

Dining with Friends II

diningIIOur 20th Anniversary Cookbooks are here!  The Friends of the Center Line Library have published a sequel to our first cookbook in honor of our 20 years of service raising supplemental funding for the Center Line Library.  Pick up your copy at the Library, City Hall, or the Recreation Building. The book is dedicated to our Illustrator, the late Jon Buechel, who was a lifelong Center Line resident, and donated his drawings to the Friends of the Library for the original 1995 cookbook.  His wife, Shirley Buechel, graciously let us use the pictures for the current cookbook.

The 71-page Dining with Friends II cookbook is a collection of favorite recipes by local contributors, and is one of our major fundraisers for 2013.  Proceeds will go to support our library.

Stop in the library to check out our first cookbook--Dining with Friends.

Here's a sample of one of the many recipes....

CHERRY PIZZA by Joann Penrod

Pastry for 2-crust pie:
Roll out dough to fill pizza pan. Roll out thin; prick with fork all over so crust does not shrink. Bake crust for 15 minutes at 375 degrees.

1 (8 oz) pkg. cream cheese      1 tsp. vanilla
1/2 cup sugar                              2 eggs

Beat together cream cheese, sugar, vanilla and eggs (mixture will be thin) and pour over crust. Bake at 35 for 15 to 20 minutes, until set. Cool thoroughly before putting topping on.

2 (1lb. 5oz) cans cherry pie filling
1 tsp. almond extract
1/2 to 3/4 cup sugar

Put all ingredients in bowl and mix well. Spread over top of pie. Chill about 2 hours before serving (can be made a day ahead and chilled)

To serve: Cut into wedges like pizza. Top with Cool Whip or whipped cream if desired.
